My dad's favorite dessert has always been dark chocolate Reese's Peanut Butter Cups. But since being diagnosed with Heart Disease and Pre-Diabetes, I had to find an alternative. His doctor says that while he can't eat these all of the time because of the oil and sweetener, he can have one once-in-awhile as a splurge -- and it is a splurge because they taste so good!!! For a little extra scrumptiousness I even just put a thin layer of the bottom chocolate layer down in the cups, freeze for 10 minutes, then add the peanut butter layer, freeze for 10 minutes, and add the rest of the chocolate layer on top. Check with your doctor before adding this treat to your diet.

Bottom Chocolate layer

2 tablespoons melted coconut oil or cacao butter

2 tablespoons natural peanut butter

1/4 cup cacao powder (unprocessed)

2 teaspoons sweetener allowed on your diet (stevia, honey, maple syrup, monkfruit)

Top Peanut Butter Layer

2 Tablespoons melted coconut oil or cacao butter

4 Tablespoons natural peanut butter

1 teaspoons sweetener allowed on your diet (stevia, honey, maple syrup, monkfruit)

Melt Bottom Layer Ingredients on Low Heat

Pour Bottom Layer into Six Cups

Freeze 10 Minutes

Mix Top Layer As Was Done With Bottom Layer

Pour Top Layer on Frozen Bottom Layer

Freeze for 30 minutes
